Desserts, custards and fruit salads







Macedonia di frutta (Italian style fruit salad)

Ingredients
(serves 6)
1 large apple
1 pear
1 banana
1 large orange
1 small tin pineapple pieces (or 1/4 fresh pineapple)
1 lemon
4 tb sugar
2 tb rum or gin (optional)
plus one or two of the following fruit, depending on season:
1 cup seedless grapes
2 apricots
1 peach
1/2 cup melon or watermelon cubes
2 kiwi fruits
2 seedless mandarins
Optional: vanilla or lemon icecream to serve
Method
Peel and core the apple and pear; cut into quarts and then into thin slices. Peel and slice the banana. Place pear, apple and banana cuts into a large salad bowl. Sprinkle with sugar, lemon juice and liquor (if desired).
Cut the orange in half; with a sharp knife, remove the pulp and add it to the other fruit in the salad bowl. Add the pineapple pieces and the other seasonal fruit of your choice, peeled and diced or sliced as needed. Mix well, then cover the bowl and let it stand in a cool place for at least 3 hours.
Serve in individual bowls at the end of the meal, adding a scoop of icecream if desired.
Macedonia can be prepared in advance and kept in the fridge for up to two days. It should always be removed from the fridge at least two hours before serving (chilled macedonia doesn't taste half as good!).

Greek style fruit salad

Ingredients
(serves 6)
2 large apples
1 pear
1 banana
1 orange
1/2 cup seedless white grapes
1/2 cup seedless red grapes
1/2 tb pinenuts
2 tb walnut halves
1/2 cup raisins or sultanas
3 tb honey
3 tb Greek ouzo, or rum
Chilled Greek style yogurt and additional honey to serve
Method
Peel and core the apples and pear; cut into quarts and then into thin slices. Peel and slice the banana. Place pear, apple and banana cuts into a large salad bowl. Sprinkle with honey and liquor; add the orange rind, cut into thin strips.
Cut the orange in half; with a sharp knife, remove the pulp and add it to the other fruit in the salad bowl. Add the other ingredients, except yogurt, and mix well. Cover the bowl and let it stand in a cool place for at least 3 hours.
Serve in individual bowls at the end of the meal, adding a scoop of yogurt and a swirl of honey to each bowl.
This fruit salad can be prepared in advance and kept in the fridge for up to two days. In this case, omit the nuts when preparing the salad; remove the fruit salad from the fridge at least two hours before serving and add the nuts.

Fruit &Mascarpone Delight

Ingredients
(serves 6 - 8)
1 packet Savoiardi buiscuits (or a small angel cake)
1 medium tin sliced pineapple
assorted fresh fruit (I suggest: 2 apples, 2 or 3 oranges and/or tangerines, 2 kiwi, 1 banana or 2, and/or other fruit, according to taste and availability)
3 egg yolks
2/3 cup castor sugar (approx)
1 lb Mascarpone or cream cheese
Method
Arrange biscuits, or sliced angel cake, in a deep, flat-bottomed serving bowl. Pour the pineapple juice on top.
In another bowl, place the cleaned, peeled and sliced or diced fruits; reserve some slices and/or pieces for decoration.
Beat egg yolks and sugar till fluffy; add the Mascarpone or cream cheese, mixing well and beating to a cream. Fold in the fruit and spread on top of the prepared biscuits (or cake).
Nicely arrange the pieces of fruit you have reserved for decoration. Refrigerate for 2 hours (minimum) and serve cold. Tip: this dessert tastes even better when left in the refrigerator for 24 hours.

Italian Hot Chocolate Drink

Ingredients
(serves 4)
4 ts plain flour
4 tb plain cocoa
2 to 4 tb sugar
4 cups milk
6 drops vanilla essence
2 ts butter
whipped cream (optional)
Method
In a saucepan, mix flour, cocoa and sugar (more or less, according to your taste), adding the milk a little at a time. When the mixture is smooth, place the saucepan over medium heat and bring to boil, stirring regularly.
Add vanilla essence and simmer for a couple of minutes. Remove from heat, add butter and stir until butter is melted.
Serve hot, adding some whipped cream in the individual mugs, if desired.
